Happiness



I don't know what took me 3 weeks into a low carb diet to make a pan of Buffalo Chicken, but I have. Oh man, next to mac and cheese *cough* it is my favorite food in existence!! I'm gonna be eating it for 3 days, and I'm ok with that! I just browned it with red pepper and then added a bottle of Red Hot Buffalo Sauce. Burny deliciousness!!

@sharon I LOVE spicy food! I love the experience of my tongue burning, sweat beading on my forehead. I don't know *why* i love it, I just know I do.

heat is my favorite flavor. I love Thai chilli sauce added to my buffalo wings.. just a dash and I am in spice heaven.

@Missa I have that -same- exact stuff! I like to add it to my scrambled egg before I make them. With JapeƱos and Pepperjack Cheese :D

Dang, a whole bottle?? You crazy, mang. I do like that stuff though, but I add some butter, because I am fat. And because the low carb message board told me to!

Yesterday the lady at work doing low carb with me brought in some chicken she coated in crushed pork rinds and fried. It was crazy but I also couldn't help thinking it was WRONG, just wrong. I dunno why, I mean, I'll eat bacon on a burger, so what's the diff? BUT STILL...weird.

@Tricia I browned it in butter before I added the sauce! I even saved a little bit of the sauce to add when it was done :)

Have you tried the pork rinds as a coating? I'm not a huge fan of pork rinds, but it would be nice to have a crunchy coating. Just cover in egg and roll in the crumbs I imagine

Well Twon, you made me do it. You got my taste buds craving buffalo wings :P I just made some for lunch and my 13 year old is dying in pain... he may lose his tongue but Im smilin' :)))

*I grill my breasts half way through then toss them with a bottle of Franks, 4 tbls ground red pepper, 2 tbls crushed red pepper, 1 tbls chopped garlic, 1 tbls garlic poweder, a wee dash of paprika, 1/2 tblsp cayenne.... mama likes em spicey!*

Since I am now sweating, does this count for exercise for the day? :P

When I was doing low carb I'd baste chicken tenders in Mayonaisse and then cover with fresh parmesan, and baked. Made for a good crispy breading.
